Kemps cottage cheese is a premium product because it's not watery. It's tightly packed. It is excellent quality. I'll pay the extra price for Kemps with zero doubts. I love it simply peppered and salted. It's good! I have a story for you about when I worked in a small café when I was a teen :)
Ahh, lipstick! Cleaning off coffee cup lip slap in dish soap in the middle 1980's was a mother! I scrubbed it off like a 16 year old young punk lusting for $ should. I learned a few things as well. How to serve. How to care. How to bow down to old ladies and show some deserved respect. I found out that you better get their food to them quickly and then fade, yet be ready for refills at a given moment.
Those ladies in the middle 1980's ate cottage cheese plates, drank Sanka coffee by the gallon (refills were 10 cents) and smoked and gossiped about anybody in town. I believe they had a lady lunch edge after some reflection. It was the lean, protein filled "lettuce and fruit dressed cottage cheese plate". It was light & easy on the stomach. The lunch that wouldn't put you into a food coma sleep type lunch.
What is a cottage cheese plate, you may ask? In my estimation and past observations, it's a lot of edible decoration and art, but it involves lettuce, fruit and Kemps cottage cheese being the center of the masterpiece; it's really a smart cold lunch. That's what it is. You can make it with spinach, kale, iceberg and romaine leaves, peaches, strawberries or melon. Salt & pepper the cottage cheese, encircle the centered cottage cheese with the fruit/lettuce dressing and you have an idea of what a cooking idealist came up with! Beautiful! It's still around, too.
