Frozen lima beans are delicious! Some people don't care for them. I admit, beans of any kind won't win friends or set you up as a social lion because of the, ahem, repercussions, so to speak. They are good for you, however and prepared right and served with some delicious sides can be a powerhouse meal with fiber, iron and protein. It's a health food!
I prefer frozen tender baby lima beans which are a little pricy at around two bucks for a twelve ounce bag. Even canned regular Lima's at 14.5 ounces (around $1 green dollars roughly per can); the beans won't come cheap. I'll add a few here for you for some shopping variety :).
The most obvious quick way to prepare them is to microwave in water for about seven to ten minutes and add a small bit of butter with salt and pepper. I don't enjoy the boil over I can't control, though.
I usually simmer & slow cook a pot of frozen lima beans on the stove* (lid off and adding water to keep the level regular) for two to three hours and add diced ham and red onions at the end then served with a side of corn bread. You can put bacon in there for some flavor, too! Minus it if you want less calories. Hey, it's all good and definitely a slice of southern cooking!
* The process is the same with dry lima beans, except keep an eye on them and reduce the time until visually tender and not torn apart. :)

I'm sure I'm creating a food sacrilege of my own making when I include canned lima beans here on this page! They are great for a simple open, dump, heat and microwave or stove heat for fast and furious eating. I will say that if you'll pay a dollar for a can to move up to an easy to steam package of frozen lima beans. No can opener needed, just scissors or a sharp knife for the bag.
