The egg business is probably one of the best managed agricultural businesses in the United States today, despite what peta and other food critic fanatics go on about. As a consumer, I won't be controlled by these maniacs. Laughing, because my spell checker wants to capitalize peta. Watch out for these food control freaks. Attacking chicken production, meat or egg? Give me a break.
I like to eat and will not apologize for it. If you love breakfast food (and it isn't always a morning food), fresh eggs are the best. Inclined toward baking? Fresh eggs make that happen. Like cornbread, pies, omelets, cakes or French toast? Again, eggs!

Peeling eggs is a pain. It's a chore, or was, until I found out how to do it very easy; the shells come off without a hitch and I don't mean in little crumb shell flakes that annoy the heck out of you! This works very well. It involves ice, so make sure you have enough for an ice bath for your boiled eggs.
The common thought process involving boiling eggs is that you put the eggs in the pan, add water enough to just cover them and boil. No.
I read once about boiling them for 6 minutes and removing them from heat. How did that work out? Peeling shell chips resulted in a moon-like landscape of divots on the egg surface. I felt like I was scraping old paint off of a garage I was going to paint!
Here goes, bear with me. Get your pan and fill it with enough water that you'll think will cover the Egglands Best eggs you want to boil. Get it boiling. Take a big slotted spoon (you'll use said spoon bringing them out) and lower every raw egg you want boiled gently down into the boiling water. Boil for ten minutes. While they are boiling, get your ice bath ready. I prepare it in the sink. Throw in ice and cold water. At the ten minute mark of boiling, take the eggs off the heat and use your slotted spoon to get them gently out of the pan and into the ice bath. Let the eggs cool down in that water!
Peel when cold. I promise you thrilled less labor shucking Egglands Best shells off! Now on to some great dishes involving eggs.
Steak And Eggs Breakfast Tacos I've made these steak and egg tacos many times and boy will they fill you right up! There's some great protein in there with the meat and eggs. With the salsa, guacamole and sour cream, this dish gives you a border taste! Good stuff :) You don't have to just make these for a breakfast, either. They are great for lunch or dinner. One change I made to the items needed was the tortillas. I went with burrito wraps which technically make this dish burritos ;) |
I find that wrapping them are less mess because it is irritating when any filling falls out!
Ingredients:
Certified Angus Top Sirloin Steak 1 LB |
Crisco Pure Vegetable Oil 40 FL Oz |
Mission Flour Tortillas Burrito 40 Oz |

Cooking:
Heat large, heavy nonstick skillet over medium heat until hot. Season beef Top Sirloin Steak with salt, as desired. Place beef in skillet. Pan-broil 12 to 15 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Remove beef from skillet. Set aside; keep warm.
Heat oil in same skillet over medium heat until hot. Add eggs and scramble until set, stirring occasionally; keep warm.
Carve steak into thin slices. Top each tortilla with equal amounts of eggs, steak and 1 tablespoon each of cheese, guacamole, salsa and sour cream.
Garlic And Herb Steak Salad I love a great salad, especially using a charcoal grill to cook and flavor a top sirloin, sliced into strips and layered on the salad. I made this kind of meal quite a bit ten years ago with chicken breast and beef. Lost art, but I never had one complaint! It's a satisfying feed; throw in some fries (and I will), and you have yourself a great meal! Added are Kingsford Mesquite coals; I recommend grilling the meat. Cooking:
Combine dressing ingredients in small bowl. Reserve 1/4 cup dressing for salad. Brush remaining dressing on onion slices.
Press 1 tablespoon seasoning blend evenly onto boneless Top Sirloin Steak. Place steak in center of grid over medium, ash-covered coals; arrange onion slices around steak. Grill steak, covered, 7 to 11 minutes (over medium heat on preheated gas grill, covered, 8 to 13 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Grill onion 10 to 12 minutes (gas grill times remain the same) or until tender, turning occasionally.
Carve beef into slices. Divide spinach evenly among four plates. Top with steak slices, tomatoes, onions and eggs. Drizzle evenly with reserved 1/4 cup dressing.
Cook's Tip: To hard-boil eggs, place eggs in pan and fill with enough water to cover eggs by one inch. Heat just to boiling; cover pan and let eggs stand for 15 minutes. Immediately run cold water over eggs or place them in ice water until completely cooled. (No, * See Food Run Fix's egg boiling tip above ;)
